We can often note a certain level of confidence that arrives whenever something old gets replaced by something new. Nobody announces it as a downgrade. Nobody stands up and says the previous method, the one that worked for several centuries without needing a software update, has been quietly retired for reasons that don’t entirely withstand scrutiny. Instead we get softer language. Streamlined. Modernised. Disrupted. Optimised for the future.
Translated into plain English, this often means the old way has been removed not because it stopped working, but because somebody found a way to charge you for a worse version of it.
I think about the bread a lot, oddly enough. Not because I’m precious about sourdough... I’m not about to start photographing a crumb shot... but because bread is a tidy example of something that worked perfectly well for thousands of years, required nothing but flour, water, salt and patience, and got systematically replaced by a product that takes four minutes, contains a list of ingredients longer than the loaf itself, and somehow still leaves you hungry an hour later. Nobody voted for that. It just arrived, branded as progress, and the old way got filed under quaint.
This is the pattern, once you start noticing it. And once you start noticing it, you’ll find it rather hard to stop.
A Brief History of Someone Being Furious About a Hamburger
In the late 1980s, a fast food chain announced plans to open a restaurant near the Spanish Steps in Rome, in a part of the city that had spent several hundred years perfecting the long lunch as a civic art form. A few thousand people turned out to protest, outraged that something so deeply rooted in tradition and regional flavour was about to be sat on by something arriving in a paper bag.
They lost. The restaurant got built. It’s still there, last I checked, doing a reasonable trade a short walk from some of the most important art history on the continent.
But here’s the detail everyone leaves out when they tell this story as a tidy little parable about progress winning. A journalist called Carlo Petrini was at that protest, and rather than accept the loss gracefully, he turned the whole thing into something with a name and a structure, which eventually became the Slow Food movement. The fast version won the building. The slow version won the argument. It just took several decades for anyone official to admit it.
Which tells you something useful about how these fights actually get resolved. Not in the moment, when the new thing arrives with money and momentum and a press release. Later. Quietly. After everyone’s had time to notice that the new thing didn’t deliver what it promised, and the old thing was still there the whole time, having never actually gone anywhere, just been declared irrelevant by people with a financial interest in you believing it.
Everything Is Fine, Including the Bit That Replaced the Old Way
There’s a phrase that gets used whenever an old method is retired in favour of a new one. You’ll recognise it instantly once it’s pointed out, and then you’ll be unable to stop hearing it everywhere, which I apologise for in advance.
The new system is more efficient.
It’s the corporate cousin of “everything is fine.” It asks nothing of you. It requires no comparison, no audit, no awkward moment where someone produces the old method and the new method side by side and asks which one actually achieves the stated goal. It simply asserts efficiency as a fact, the way a politician asserts that lessons have been learned, and trusts that nobody’s going to do the maths.
Meanwhile the old way, the one that’s been quietly retired, sits there unbothered, still functioning, still occasionally outperforming its replacement in every measure except the one that matters to whoever sold the replacement. Dry stone walls built without mortar are still standing in fields that have buried several generations of the families who built them. The handwritten letter still says, more clearly than any message ever has, that someone sat down and decided what they meant before they said it. None of that required a press release. It required someone leaving it alone long enough to keep working.
Why “If You Care to Look” Is the Whole Sentence
Here’s the bit that should needle you slightly, if it hasn’t already. The old ways haven’t gone anywhere. They’re not lost artefacts waiting to be rediscovered by an app with a calming colour palette and a subscription tier. They’re sitting exactly where they always were, mostly ignored, because looking at them properly requires something the modern world has worked rather hard to make expensive: unscheduled, unrewarded attention.
Nobody’s monetised the six hours it takes bread to prove. There’s no notification that pings when you’ve spent an appropriate amount of time writing a difficult letter to someone you’ve wronged. The old ways are slow not as branding, but as an actual structural fact, and structural slowness does not survive contact with a culture that’s learned to repackage every form of rest as a productivity technique with nicer lighting and a worse name.
So when people say nobody cares about the old ways any more, what they generally mean is nobody’s been shown a reason to look, because looking doesn’t generate revenue for whoever’s busy selling you the replacement. The old ways didn’t lose the argument. They just stopped being marketed, and we mistook silence for defeat.
A Few Small Pieces of Evidence to the Contrary
A society doesn’t lose its old methods because they failed. It loses them because somebody benefited from telling everyone they’d failed, and there was nobody sufficiently bothered to check. Even now, there’s a measurable resurgence in things like home cooking, local markets and traditional bread-making, which is either heartening or faintly tragic depending on how you look at it... heartening, because people are finding their way back to methods that work; tragic, because it took a branded movement with a hashtag to give them permission to do something their grandparents did without needing a name for it.
I’m not going to end this by telling you to take up dry stone walling or bake your own bread, because that’s exactly the move I’ve spent this entire piece taking apart... the old way, repackaged as a lifestyle choice, sold back to you with the faint implication that adopting it will fix something the new way broke. It won’t, particularly. That was never really the point of it.
The old ways were never trying to fix you. They were just methods that worked, quietly, without needing anyone’s permission to keep working. The new ways arrived with better marketing and a louder claim to inevitability. That’s the only thing that’s actually changed. Not whether the old ways still work. Just whether anyone’s still being told the truth about which one does.
